Vegan meringues of chickpeas forms

Meringue for all! ‘Aquafaba’, the liquid from a can of chickpeas forms the base for this egg-free meringue. Serve the same day ideally: the meringues will soften and become sticky the longer they are kept.
Each serving provides 20 kcal, 0g protein, 5g carbohydrate (of which 5g sugars), 0g fat (of which 0g saturates), 0g fibre and 0g salt.
Method
Preheat the oven to 120C/100C Fan/Gas ¼. Line a large baking tray with baking paper.
Drain the chickpeas in a sieve over a measuring jug – you should have around 150ml/5fl oz of chickpea aquafaba liquid from the can. Weigh out 50g/1¾oz of the liquid. If you need to make more meringues, you can double or triple the ingredients. Keep the remaining chickpea water and chickpeas covered in the fridge for up to 3 days to use in other recipes.
Pour the liquid into a stand mixer, or hand whisk, and mix on a medium setting for 2–5 minutes, or until white, light and standing in firm peaks when the whisk is lifted. If you remove the whisk and turn the bowl upside down, the mixture shouldn’t slide. If it does, continue mixing.
Slowly add the sugar to the whisked aquafaba, just a tablespoon at a time, with the mixer on high speed until it is all incorporated. Continue whisking until very firm and glossy – this could take 5 minutes more. The sugar needs to be fully dissolved, so there should be no hint of graininess in the meringue.
Use two dessert spoons to drop 14–16 large spoonfuls of meringue onto the prepared tray, or pipe onto the tray using a large piping bag and star nozzle. Bake for 2 hours. Leave the oven door shut and cool for a further 2 hours before removing from the oven.

Ronaldo accepts €18.8m deal over tax evasion

Football superstar Cristiano Ronaldo has cut a deal with a court in Madrid over tax evasion charges, accepting an €18.8m (£16.6m) fine.
A huge media presence met the player outside the court, after a judge refused his request to appear by video or to enter the building by car to avoid the spotlight.
The deal, agreed in advance, includes a 23-month jail sentence.
But in Spain, convicts do not usually do time for sentences under two years.
The non-violent nature of Ronaldo's offence means he is unlikely to spend any time at all in jail, serving it on probation instead.
The court appearance lasted mere minutes as Ronaldo accepted the deal offered by prosecutors.
The current Juventus player, who played for the club in Italy the night before, arrived smiling and giving a thumbs-up, apparently unfazed by the media presence.
His lawyers had argued that given his fame, avoiding the main entrance was needed for the player's security.
Journalist Ruben Canizares posted a video of the footballer arriving at the provincial court with his fiancee Georgina Rodriguez.

Katelyn Ohashi: My 'crazy' week as the 'perfect 10' gymnast

Katelyn Ohashi is used to performing under pressure. But she admits that the level of attention she has received in the past week has felt "really different".
The 21-year-old gymnast took the internet by storm after a video of her "perfect 10" floor routine went viral.
The clip of Katelyn perfectly executing seemingly gravity-defying flips and sassy dance moves has been viewed more than 60 million times, and made headlines around the world.
But what is it like to be at the centre of this whirlwind?
"The whole experience has been totally crazy," Katelyn told the BBC. "My phone just blew up when the video went out. It's just totally hectic."
She hopes to still be able to "fly under the radar" sometimes, and jokes she "feels horrible for actual famous people. This is their actual lives!"
When asked who she was most excited about having seen her performance, Katelyn immediately says: "Jean-Ralphio from Parks and Rec!"
Her choice of Jean-Ralphio, a character played by actor Ben Schwartz in hit TV show Parks and Recreation, hints at one part of her personality. Many online have called her "full of joy", having an "infectious passion" and "so fun".
Katelyn is keenly aware that it is these traits, along with her undeniable technical ability, that makes her performance so compelling.
"My coach Ms Val always reminds me that when people watch me they need to have fun.
"That's why I've been really touched by people saying things like 'this is the sort of positivity we need right now'. It's a nice change."
